Milestone week!

Last week was a milestone week of sorts. Lots of new things happening...
The biggest one was my son starting school!! Yes, time has flown and my little one has also flown the coop (well, not really!). It was received with mixed but similar reactions on both our ends. His was mostly abandonment and apprehension at facing the new school and routine. Mine was surprisingly abandonment (yes, for some reason I felt this acute sense of separation the day before he started school :( as well) and apprehension as well for him and myself for having to adjust to the new routine.
But I am happy to say we have both survived the first week with some minor scars (which will only make us stronger) and we are trudging along bravely in to the second week.....
As my son says - "Mama, your baby has become a big boy now!"

The other big thing happening at my place is the harvest of my kitchen garden (well actually just one plant!). And my flowering plants are actually flowering!! Yaayy!! They too survived the week!! Here are some pics to prove it!

Leftovers Leftovers

I was just about to start cooking when the spouse called to say he is not coming home for dinner; he had to attend a wedding. So I ditched all plans of cooking! Had yesterday's chole and had made some chickpea paranthas for my son's lunch. So had leftovers from there as well. So just had that for dinner. Tomorrow will cook something new I promise! :)

On another note - I have taken up gardening!!! Well, it is really pot gardening; no not the smoking kind!!! Disadvantages of apartment living, or should I say advantages - not too sure if the garden would survive my "green" thumb!!!
So to start off I have some petunias and hibiscus and aloe vera for one of my balconies and for the kitchen have started off with some methi and coriander. The fenugreek (methi) is doing great! Same cannot be said of the coriander - something has sprouted in that pot but it looks like a mutant species! So it remains to be seen what actually will grow there. But the ambitious plan is to grow basil/tulsi, mint and chillies along with the fenugreek and coriander. Time will tell how much of it actually happens...

Haveli Ka 'Khana Khazana'!

On Sunday visited the N grill (https://www.facebook.com/pages/N-Grill/111901618836414) for the first time with gal pals. Was skeptical initially since the reviews online for the restaurant were not too promising. But the experience proved to be a satisfying one. I am not too sure if it was the company or the food or a combo of both :) But I had a great time!

I had stuffed so much at the restaurant that felt the need to practice some restrain with my evening meal. Decided to order a light meal from a nearby restaurant called Haveli (http://www.zomato.com/hyderabad/restaurants/city/begumpet/haveli-90368/menu). Came across this website - Zomato.com recently while searching for restaurants and it is a great website - with reviews and menu. Makes ordering out so easy! Wanted to get the sizzler but they did not have it so instead ordered the Veg Combo Appetizer plate, Egg Biryani and Veg Jaipuri. The meal was decent. Out of the appetizers only the hara bhara kabab deserves a mention. The other two in the plate was sauteed cauliflower (cannot be called tandoori gobhi!) and the Subji Sheekh kabab was nothing but chick pea flour skewered (it was tough and lacked flavor). The Egg biryani and the Veg Jaipuri were good.

Today I made Punjabi Chole to go with rotis. And I was done. I think I need to start a food journal and note down exactly what and how much I am eating. I have been eating a lot and not exercising and all that is not doing so well on my tummy and my overall weight :( 

Rotis and Punjabi chole

Punjabi Chole
2 cups of chick peas soaked in water with a tea bag for 8 hrs and then pressure cooked in the same water till soft
2 large onions + 6 cloves of garlic + 3 dry red chillies (soaked in hot water for half hr) ground to a paste
3 tomatoes ground to a paste
1 tsp pomegranate seed powder (optional)
1 tsp cumin seeds
1 tsp kitchen king masala or Chole masala pd
1 tsp garam masala pd
Salt to taste


Heat oil in a pan and add cumin seeds to splutter. Then add the onion paste and fry till nice and brown. Then add the tomato paste and fry till the tomatoes are well cooked. Then add the spice powders and fry for a minute more. Now add the cooked chickpeas and a half cup of water. Cover and simmer for about 10 minutes. Garnish with fried onions and chopped coriander if you like.

I feel the weekend approaching......

Come Friday, I feel like I used to feel when I went to work. A feeling of euphoria that the weekend is approaching and that I can have two days of bliss. Same with cooking. Come weekend - no cooking. Yaay!

Menu for today - Mooli Paranthas and quick and easy egg curry.

Mooli Parantha and Easy Egg Curry

Quick and Easy Egg Curry
 
2 medium onions roughly chopped
3 large toamtoes roughly chopped
3 green chillis slit
5-6 cloves of garlic
1/2 inch piece of ginger
4 peppercorns

Boil all the above in a little water till they are cooked. Grind to a smooth paste and reserve.

Break open 4 eggs and beat them together with a salt, chilli powder, a tsp of cumin seeds, 1/2 tsp of kasuri methi and cook them in the microwave (use a dish so that they are like 2 inches thick when cooked) till they are set. Cool and cut them into cubes.

Heat a pan with a little oil and add some mustard seeds and cumin seeds. After they have spluttered add the ground paste and add salt, chilli pd, and kitchen king masala to taste. Add about half a cup of water or to your desired consistency. Simmer for a few minutes. Now add the egg cubes and cover and cook for another minute or two. That's it!

Watched the movie The next 3 days starring Russel Crowe and Elizabeth Banks. Loved it! It is about a husband whose wife is taken into custody on murder charges and he decides to get her out of the prison. Every minute is action and emotion packed. The emotion between the husband and wife, wife and child, the father and child, of the father and his father - every bit is movingly portrayed without compromising on the action front. Lovely. Do watch it.

Had been itching to make dhoklas for a long while. Even got a whole box of Eno to make them. Just did not get the chance until today. Made dhoklas for snack today. Take a look at the pic and decide for yourself. My verdict - lip smacking!!  Would have been super with some chutney to go along with it, but just made do with Maggi hot and sweet. Daddy's day in!

Today was my father's birthday so yet another excuse for not eating at home!!! Asked him to take the day off from work. Hence the title of the blog - in case you were wondering...

Lunch was from a place called Utupura (http://www.utupura.com/). It is a Kerala restaurant. Well, the food was not completely authentic Kerala cuisine but very close.  We ordered the veg thali and it had rice, sambar with mixed veggies, plantain stem in coconut gravy, bitter gourd fry, curd with pickle, chutney, fried appalam as accompaniments and payasam for dessert. I did not take a picture as the food came in individual aluminum foil packs and by the time the food got home I was soo ravenous that I attacked the food without any ado :)

I did bake a cake for my dad. It was not a start from scratch cake. I used the ready to bake mixes. Just added milk and butter and it was ready in a half hr. Just did a sugar powder dusting ( a thick coating to cover the imperfections!!) So when I said I "baked" a cake - I did just that :)

For the evening meal ordered out again!! From All Seasons - the same place we ordered from this Sunday. Ordered the Paneer Shahi Kurma and Nawabi Hundi. They were both fine.

Comfort food...

Monday technically marks "back to cooking", but this week has been an extended weekend (well in the United States it is!!) So although what I cooked is not considered a full meal - it was for me :)

I can have rasam any time of the day so that is what I made for dinner. Accompanied with lady finger fry it is the best comfort food that I can have.

Rasam rice with lady finger fry

-----------------------------------------------------------------------------------------------------------------------------
Easy Instant Rasam
1 tbsp cumin seeds
1 tbsp chana daal
1 tbsp tuvar daal
1 tbsp coriander seeds
4-5 pepper corns
Saute all of the below with a little oil and grind them to a powder and reserve.
4 medium tomatoes - ground to a paste
4-5 garlic cloves pounded
A pinch of asafoetida pd
2 green chillies slit
1/2 tsp turmeric pd
Salt to taste

Heat a little oil in a pan and add a little cumin and mustard seeds to splutter. Now add the asafoetida pd and the green chillies, followed by the ground tomatoes. Add the turmeric pd and the ground masala pd and salt. Cover and let it simmer till the tomato paste is cooked and it loses its raw smell. Add water to correct the consistency. Garnish with chopped coriander leaves.

Lady Finger Fry

Just saute the chopped lady finger with salt, turmeric pd and chilli pd on low heat till they turn crisp. They do take a while but it beats using a lot of oil and getting them done quickly!

But this is not the hubby's idea of comfort food so he actually got food from outside and Chinese nonetheless!! So guess what?! I had another dinner!! It was a carnival for my taste buds but not so much for my stomach or the other internal organs I think! Had to have Digene before going to bed!!!

Weekend taste travels to Arabia!

I ordered food from a "never before ordered food from" place this weekend. This is a restaurant called All Seasons (http://www.allseasonshyderabad.com/). It is a multi-cuisine restaurant which serves Arabic, Lebanese and Indian food. I wanted to try the Arabic menu. I love falafels so decided to try this place. Ordered the falafel (of course!) with the Karnabet (sauteed cauliflower, broccoli, onions, garlic and coriander in cumin sauce served with rice) for the main course. Well, the falafel was good but they did not have tahini sauce though :(( Instead they gave an eggy tasting mayo!! So much for authenticity!!. But the main course tasted suspiciously like a Chinese gravy dish - the only difference being that the sauce had a distinct flavor of cumin. But other than that and the presence of coriander the dish could have been any Chinese stir fry gravy dish!! But it tasted good so all was well :)

Hubby did not want to venture out of his comfort zone so he had the Paneer Tikka Masala and Dal Tadka with the Veg Dum Biryani. His verdict - tasted very good but had copious amounts of oil.

Bento from Rajasthan!

Had a great day today! Met up with friends for lunch today and no cooking!! Well, I did not want to cook simply because I saw this ad in the paper today about Rajdhani starting a home delivery of meals in boxes. And I simply had to try it out! And I could not wait till tomorrow!! For those who have been faithful to this blog know that weekends are cooking-free days in my household :)

Lunch was at a place call Beyond Coffee (www.beyondcoffee.in). A great place to hang out with little kids. They have a very laid back atmosphere and have stuff for the kids to do like toys and paper and lots of crayons. And they do not get upset if the kids create a mess which they almost always do!! The place also serves as an art gallery so you are not staring at plain walls and same decor if you are hard pressed for conversation!! And the food is not too bad at all :) Today I had the pizza and one of their cold coffees. The pizza was alright. I will stick to the pasta and sandwiches :) But do remember that this is strictly from a vegetarian's point of view.

Now for the bento box from Rajasthan. First of all this is not for the health nuts out there! All the curries came with their own protective shell of oil!!! I had to painstakingly remove what I could with a spoon! But the food was alright. I have been to their restaurant once and sampled their thali so I was not in for any surprises. I knew how the food would taste like (the oil was a bad surprise!!) But all in all an okay meal. There were 2 curries (gatte ki sabji and aloo matar rasedar), one daal, 5 rotis (really small ones), rice, 2 farsans (one was a dhokla and the other was a slightly sweet, pea filled gujiya), papad, pickle, a dessert (rasogulla) and mouth freshner (which was an unusual combo of sesame seeds, flax seeds, fennel seeds and the usual rock sugar. Made for a very interesting taste).

Also watched The Jacket yesterday starring Adrien Brody and Keira Knightley. It was a combination of science fiction and supernatural but did not do full justice to either.  This is not for people who look for logic and reasoning in the films they watch. This is for people who are willing to leave their "thinking" brains behind and just get involved in the plot and the characters - in which case the movie proves to be mildly entertaining and intriguing.

Mother of all blog posts....

Okay! I have been lazy all these days... Kept cooking and taking pictures but did not really feel like blogging about them. So here is the backlog of all the posts that should have seen the light of day a little earlier :)

There were no vegetables in my refrigerator except the shriveled up or near to that stage carrots! So had to use them up. Made carrot rice.

Carrot Rice

Carrot Rice
2 cups cooked rice
6-10 carrots shredded
3 green chillies slit
1 tbsp of cumin seeds + 1 tbsp of coriander seeds + 1 tbsp of chana dal + 1 tsp of coconut to be dry roasted and then ground to a coarse powder
Handful of curry leaves
A pinch of asafoetida
1 tsp turmeric pd
Salt and chilli pd to taste

Add oil in a pan and add a tsp of cumin seeds to splutter, followed by the asafoetida and the green chillies and curry leaves. After a minute add the carrot and fry till the carrot is cooked but not too mushy. You can sprinkle some water and cover and cook to retain the color and cook faster. Now add the salt and chilli pd and cook for a minute more till the chilli powder loses its rawness. Now add the cooked rice and mix well till all the grains of rice are well incorporated with the carrot mixture.

Want to know the easiest way to beat the heat - sit in an air conditioned room (or a good cool room with lots of shade), eat a bowl of ice cream and watch movies with lots of snow!!! I tell you - it works!
I did that today - nice bog bowl of Thandai ice cream from Naturals - they make the yummiest ice creams with all the natural fruits. Yummmmm!!! I scream, you scream, we all scream for ice cream!! And I watched a christmas movie - Fred Claus - the movie itself nothing great but I like Christmastime movies..

For dinner made Beetroot Paranthas and Potato peas masala from one of my favorite cook books of all times - Indian Vegetarian Cookery by Rajalakshmy Subramanian. I got this book from my parents when I left for the US more than a decade ago! It has survived the journey to and back and been there throughout like a trusted companion. The recipes are easy to follow and no fancy ingredients make it a very easy book to refer to.

Beetroot Paranthas and Potato peas masala

Beetroot Paranthas
2 beetroots ground to a paste
1 tsp cumin pd
1 tsp coriander pd
1 tsp garam masala pd
A pinch of cumin seeds and asafoetida pd
Salt and chilli pd to taste

Heat oil in a pan and add the cumin seeds to splutter followed by the asafoetida pd. Now add the beetroot and saute it till it is almost cooked. Add the spice powders and the salt and cook for a minute more. There should be no water in the mixture.

Use this mixture as a stuffing inside the chapatis to get beetroot paranthas.


Potato Peas Masala
3 Potatoes boiled, peeled and cut in to cubes
1 cup peas
1/2 cup of beaten curd
Salt to taste

To be ground to a paste
2 tomatoes
2 dry red chillies
2 tbsp grated coconut
1 small capsicum
1 tsp coriander seeds
1 tsp cumin seeds
1 tsp chopped ginger
3 cloves
1 inch piece of cinnamon
3 cardamom pods
Grind all of the above to a fine paste and reserve.

Heat oil in a pan and add the ground masala. Saute till the masala is cooked well for about 3-5 minutes. Now add the peas and potatoes and saute for an other minute. Add the curd and a cup of water and salt and cover and simmer for about 10 minutes.

Had a reall craving for paav bhaji today. The kind you get in aamchi Mumbai. Absolutely lip smacking! So decided to make that for dinner. A breather from the usual daal roti sabji!

Paav Bhaji

Paav Bhaji
3 cups of mixed vegetables - potatoes, carrots, peas, capsicum and cauliflower
2 onions minced finely
3 tomatoes ground to a paste
3 green chillies ground to a paste 
1 tbsp ginger garlic paste
2 tomatoes chopped finely
2 tbsp paav bhaji masala
Salt and chilli pd to taste
Butter for frying

Heat oil in a pan and add three fourth quantity of onions. Saute till light brown. Add green chillies paste and ginger-garlic paste. Stir-fry for half a minute. Add half the quantity of tomatoes and cook on medium heat for three to four minutes, stirring continuously or till oil separates from the mixture. Add mixed vegetables and half a cup of water. Bring it to a boil and simmer for ten minutes, pressing with back of the spoon a few times, till all the vegetables are completely mashed. I cooked the vegetables in the pressure cooker for a little while so they were soft to begin with.
Add paavbhaji masala, salt and remaining tomatoes. Cook on medium heat for two minutes, stirring continuously. Heat half of the butter in a thick-bottomed pan or a tawa. Slice pav horizontally into two and pan fry in butter for half a minute, pressing two or three times or till pav is crisp and light brown. Garnish the bhaji with chopped coriander leaves, butter and serve hot with pav accompanied with remaining chopped onion and lemon wedges.

I love Thai food. Had the Olive Rice and Thai Laksa with Veg in Yellow Curry. The curry was fiery enough to make you shoot out flames from your hair!! Olive rice was nice but non olive lovers might need some time getting used to the flavor.




Watched the Lake House starring Keanu Reaves and Sandra Bullock. It is a supernatural chick flick. I love supernatural stuff and happy endings in love stories so this one had a healthy dose of both. And the house in question was not bad at all! Right on the lake - built on stilts - a little low on privacy, what with the glass walls - but an awesome house nonetheless. So my vote for the movie - watch it if you are low on good movies to watch. I was not ecstatic but enjoyed the movie.

Did not want to cook so decided to use a ready made masala mix today. Chose the butter chicken one - Yes. I am a vegetarian. So decided to use this mix with boiled eggs. Well, the result turned out ok but it tastes no where close to the real deal. All these ready to cook mixes - whether they are the masalas and you add your own main ingredient - like the one I used or the ones that are ready to be eaten after just being warmed up - they all have the same smell and flavor. Not very gourmet!! They are passable if you are not up to cooking and yet want to have something at home but otherwise I would rather go the extra mile and make it from scratch.

This meal was a last minute thought. Had fresh mushrooms that I had bought the previous day so I had to use those. And had the methi leaves from a little while back (okay a really long while back!!) so made a sabji with those. And had the foresight to soak rajma the night before so made Rajma masala to go along.

Mushroom Methi and Matar
1 packet of mushroom chopped
1 bunch of methi leaves (mine were pretty sad looking! :()
1/4 tsp Pepper pd
1/4 tsp turmeric pd
1/4 tsp garam masala pd
1 onion finely chopped
1 tomato finely chopped
1 tsp ginger garlic paste
1 tsp cumin seeds
Salt and chilli pd to taste

Heat oil in a pan and add the cumin seeds to splutter. Add the onions and ginger garlic paste and fry till they are golden brown. Add the tomatoes and fry till they turn mushy. Now add the mushrooms and peas and cover and cook till they are almost cooked. Now add the methi leaves and salt and all the masala powders. Cover and cook for another two minutes.

Watched Sin City the other day. Very interesting - the way the whole movie is in black and white. Very comic bookish (the stories in the movie are based on marvel comics). Could not finish the movie though. The cd was damaged so it just kept hanging after a certain point. What a bummer!!

Was again in the "what to cook for tonight" quandry tonight! Had a lot of curry leaves lying around and wanted to use them up.  I am very fond of the "karevapaku podi" (curry leaves powder) that is quite famous in the Andhra cuisine. So decided I will use that to make a sabji. And I think I had made lauki daal to go along with it (it has been a while since I made it and the picture is not jogging my memory enough to recollect what daal it was!!!)

Curry leaf potatoes
2 bunches of curry leaves - separated, washed and dried
4 potatoes chopped and parboiled
10 cloves of garlic
3 dry red chillies
1 tbsp urad daal
1 tbsp chana daal
1 tbsp coriander seeds
1 tbsp cumin seeds
4-5 pepper corns
1 marble sized ball of tamarind
1/2 tsp of asafoetida pd 
Salt to taste

Heat oil in a pan and add the cumin, coriander, asafoetida pd and then the daals and garlic and dry red chillies. Saute till the daals turn light brown. Now add the curry leaves and tamarind piece and saute well till the curry leaves are well roasted and turn crisp. Cool and grind to a powder.

Heat oil in a pan and add a little cumin seeds to splutter. Add the potatoes and saute them for a while. Then add the ground powder and salt and mix till the potato pieces are well coated.

I am nearly halfway through my catch up blog... The problem is the longer I take to catch up - the longer it gets - with the addition of new meals each day!


One weekend I decided to get food in from "Mast Kalandar" (http://www.mastkalandar.com/). From all the reviews that I had read about them in WOW ( magazine) and the daily news papers I was expecting some really good food! But it was a let down. I tried four different paranthas from this place - Paneer methi corn, mixed veggie, chilli paneer and cheesy spring onion. And all of them were more 'aata' and less of the fillings. The paranthas came with daal makhani and that was fine.
I am not ready to write them off yet - Will give them one more chance :) But the reviews were all so over the top for the food that I ate. Makes me think if the reviews are really genuine. Either that or the person who wrote the review has not sampled paranthas from Creme Center (in Mumbai and now in Chennai as well). Absolutely sinful! Note to self - make a trip to Mumbai for the vada pav, paranthas from creme center and the pav bhaji. Soooon!!!

Made mushroom rice today. Nothing to it really. Just the usual fry the onions, slit green chillies, ginger garlic paste and tomatoes till well done. Add the chopped mushroom, chilli pd, salt to taste and add the cooked rice. You are done! I had it with some hot and sour soup from Knorr.

Today did not make anything excpetional. Avaraikka fry with peanuts and Ridge gourd curry - at the risk of having left overs (hubby is not too fond of this curry so will have leftovers. In all other cases the fridge will be swept clean!!)

Fast food - real fast! That was the theme today! Got some frozen vegie burgers from the super market. Sauteed them and assembled the burger. Accompanied them with cucumber and used cabbage instead of lettuce (I forgot to get lettuce!!). Made some home style french fries (chop the potatoes, rub them with some olive oil and salt and chilli pd and some oregano and bake them till cooked) and you have a complete meal (almost completely healthy!!!) Eat your heart out people!

Thai food yet again today! Well it was my version of Pad Thai noodles. I had a  very little bit of some wholewheat pasta lying around. That was not quite enough for the meal so had to use 2 packs of maggi along with it!!
 But you would not know I had added Maggi if I had not told you! So just cooked the noodles till al-dente. Then sauteed julienned carrots, broccoli and paneer (instead of tofu) with some garlic and dry red chillies. Add some salt and red chilli paste (soak the red chillies in hot water for about an hour and then grind them to a paste). Mix peanut butter and a little hot water in a cup and add it to the veggies. Now mix the cooked noodles and you have Pad Thai - well my version of it anyway!!

Had to take my son for his vaccination today so did not have much time to cook in the evening. Was browsing for some one pot rice recipes and came up with this one from Sanjeev Kapoor. I used to be a huge fan of his program on Zee TV a while back. Now I think he is so full of himself!! His food is still yummy but his personality has undergone a sea of change - not all of them good!!!




Baoli Handi with Cucumber raita

Baoli Handi
Carrot, 1/2 inch cubes 1 medium
Green peas 1/4 cup
Green chillies 4
French beans, chopped 7-8
Potato, chopped 1 medium
Tomatoes, chopped 2 medium
Split green gram 1/4 cup
Rice, soaked 1 cup
Soya granules 1/4 cup soaked in hot water
Cumin seeds 1 teaspoon
Onion , sliced 1 large
Salt and chilli pd to taste
Turmeric powder 1/2 teaspoon
Garam masala pd 1 tsp
1 tsp ginger garlic paste
Heat oil in a pan. Add the cumin seeds and after they have spluttered, add the ginger garlic paste and onions and salt and fry till the onions are browned. Now add the vegetables and saute them for a minute. Now add the green gram daal and saute for another minute. Add all the spice powders and the soaked rice and soya granules and saute for another minute till everything is well mixed. Now you can either pour the water directly in to this pan and let it cook or do what I did and transfer the contents to an electric rice cooker and let it cook till done. Garnish with coriander leaves (optional).

Indo American Ties!

Today's meal consists of side dishes - no main course!

Paneer tikkas and green bean casserole. Not a very popular combination. I wanted to do something with green beans and the ideal combo with that would have been a non vegetarian steak. The next best thing to animal protein for vegetarians is Paneer! Hence the paneer 'steaks' (tikkas)!

Cheesy green bean casserole
2 cups green beans chopped and boiled with salt water till they are tender
1 + 1/2 cup shredded cheddar cheese
1 + 1/2 cup fried onions - I chopped the onions and then fried them with a little salt and oil till they turned brown
1 packet cream of mushroom soup packet - Make according to directions - just add a little less water so the end result is thicker than the usual soup.
1/2 cup of milk
Salt and pepper to taste

Mix the beans, cream of mushroom soup, milk, 1 cup onions, 1 cup of cheese, pepper and pour the mixture in a casserole dish. Bake at 400 deg F for about 20 mins. 10 mins before the dish is done add the remaining onions and cheese and let the dish finish cooking. Remove, cool and serve.


Paneer Tikka
500 gm paneer cut into finger sized chunks

For the marinade
4-5 cloves garlic
1/2″ piece ginger, peeled and chopped
 Red chilli powder to taste
1 tsp kitchen king masala
1 tbsp cumin, roasted and ground
1 tsp oil
juice of half a lime
3 tbsp thick curd
Salt to taste
Grind all the above to a paste

Coat the paneer pieces with the marinade and let it sit covered in the refrigerator for a min of 30 minutes.
Ideally you would put them on skewers and grill them. I just roasted them on a non stick pan with a little oil sprayed to prevent them from sticking too much to the pan.

Sunday ka Funda(y)!

Aao sunaun tumhe ande ka funda!

That was the song that was doing the rounds in my head on Sunday morning!! So decided to make an egg frittata for breakfast. It is real simple but it is a complete yummy in the tummy :)

Egg frittata

Egg Frittata
2 eggs
1 small potato chopped into small pieces
1 small capsicum chopped to pieces (you could add other colors to make your frittata more colorful)
1 onion diced
1 green chilli chopped finely
2 cloves of garlic chopped finely
1 tsp Oregano
Salt and pepper to taste
1/2 cup grated cheddar cheese

Heat oil in a pan and saute the onions, garlic and the vegetables with a little salt and pepper till they are soft. Now whisk the eggs together with a tsp of milk and then pour it in the pan. Cover and cook till they set. Now sprinkle the cheese on top and bake the dish till the cheese on top melts and turns a little brown. Cool and cut into slices to serve.

Night we ordered in from Bikanerwala. They have North Indian thalis that I love. They had paneer makhani, Kadhi and Rajma with rotis, paneer peas pulao and Gulab Jamun for dessert. Yumm!

Weekend Mode. a.k.a Depeche Mode!

Was listening to one of my old cds by Depeche Mode hence the title!
As the regulars to this blog already know by now - weekend mode usually begins by Friday - which translates to eating out or getting imports, basically no cooking! This week it started on Thursday.
Today got food from mom's place - Kofta, Bhindi and Daal.

My humble contribution to today's meal was the dessert - Cranberry Muffins.

Cranberry Muffins
1 1/2 cups chopped frozen cranberries
1 1/4 cups sugar, divided
3 cups all-purpose flour
1 1/2 tablespoons baking powder
1/2 teaspoon salt
1/2 cup butter
2 eggs, lightly beaten
1 cup milk
1 cup chopped pecans

Rub the cranberries with the 1/4 cup of sugar and keep it aside.  In a mixing bowl, combine flour, baking powder, salt, and remaining 1 cup sugar. Add the butter and rub the dough till it resembles bread crumbs. Whisk the eggs with milk and then add it to the flour mixture and mix till they are well incorporated. Gently fold in nuts and cranberries. Fill muffin tins two thirds full. Bake at 400° for 20 to 25 minutes.

Psuedo Travels!

Hi all! No travels today either! You know what that means don't you?! No cooking!
Mil had sent some food over so I am calling it travels to Andhra Pradesh today! :-) She had sent over some masala potatoes and mango pulihora.

So what's the hype about the Prince William and Kates wedding anyways?! Just two people getting hitched. So big deal! There are plenty all over the world doing it. What is the need to telecast it all over the place? Me. I am going to catch some movie on my mitashi!

No man's (state) land! and some random ramblings...

Today went out for a swim and lunch meet with the ladies and kiddies at the Novotel. The food was good as usual. But the weather... Wow! was it hot!! I wish there were more indoor pools in Hyderabad. It is sheer torture to be out in the sun! Me and my son came back looking like roasted (more like burnt!) chickens!!
So today's dinner was Paneer bhurji and cheese corn chapatis (that my mom had tried out today). Hence the title of today's blog. Today's dinner could belong to any state as I did not travel anywhere specific :)

I watched a malayalam movie called "Kerala Cafe" yesterday. Very interesting movie - it is actually a collection of 10 short stories by 10 different directors. Very engaging, I must say.
Also watched "It's complicated" starring Meryl Streep and Alec Baldwin. I like Meryl Streep - Baldwin I couldn't care less. But the movie was good. The best part about the movie was the house that Meryl's character lives in - to die for!! She owns a bakery of her own. She cooks like a pro and has this wonderful vegetable garden behind her house that she picks the fresh veggies to cook from.
Oohh! What I would do to live there! Just perfect!

Well, on that note, I am off to bed to dream about wonderful houses with vegetable gardens and flowers and swimming pools and warm scones and chocolate truffle cakes and.......

From Karnataka with love!

Today I sojourned into the Southern part of Karnataka and came up with Bisi Bele Bhath for dinner.  I did not make anything else as it is a complete meal by itself. It has carbohydrates, vegetables and proteins :) Accompanied by Lays potato chips, it has comfort food written all over it!!

Bisi Bele Bhaath
2 cups rice
1 cup tuvar daal
2 cups - Beans, carrots and potatoes chopped
1/2 cup green peas
1 Onion sliced thinly and fried till golden brown
3 tbsp tamarind paste or 1 cup of tamarind juice
1 tbsp of jaggery
salt to taste

For the bisi bele masala
4-5 dry red chillies
2 tbsp chana daal
1 tbsp urad daal
1 tsp coriander seeds
1 tsp cumin seeds
2 cloves
1 cardamom
1 inch piece of cinnamon
1/2 cup grated coconut (or you could use the dessicated coconut like I did)

Roast all the above except the coconut in a little oil till they turn fragrant and turn color. Grind it with the coconut and water to make a smooth paste and reserve.

For the final tempering
1 tsp ghee or butter
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1 tsp urad daal
1 tsp chana daal
a pinch of asafoetida
a handful of curry leaves
2 dry red chillies broken to pieces


Pressure cook the rice, vegetables and daal in a pressure cooker in separate vessels. Add a little salt and jaggery to the vegetables before you pressure cook them.

Meanwhile add 2 cups of water to the tamarind paste and let it come to a boil. When the water has reduced by half, add the reserved ground paste and cover and cook for 5 minutes. Then add the vegetables and the daal and rice. Adjust the salt and add more water to keep the consistency from getting too thick and cover and cook for a minute taking care to keep mixing it so that the bottom does not get burnt. 
In a separate pan, heat the ghee and add the mustard seeds. After they have crackled add the remaining tempering ingredients and fry till they have changed color. Pour this into the rice mixture along with the fried onions.

Mix well and serve.

A tale of two states!

Inspired by Chetan Bhagat's book and the more recent Dum Maro Dum (it is based in Goa) - dinner tonight was a fusion of Punjabi and Goan cuisines :)
Beetroot parathas with Goan Egg curry (fish curry with no fish but eggs instead!)

Beetroot parathas and Goan egg curry

Beetroot Paratha
2 cups beetroots chopped
1 onion chopped
2-3 green chillies
1 inch piece of ginger
2-3 cloves of garlic
1 tsp garam masala
salt to taste

Grind all the above except the garam masala pd to a paste and reserve. Heat a pan and add a tblsp of oil. Saute the ground mixture on low heat till all the water evaporates. Add the garama masala and cook for a minute more. Cool and use this as a stuffing for your parathas. (Take a ball sized amount of stuffing and place it inside the chapati dough and shape in to balls. Roll it into parathas and cook on a griddle till lightly brown on both sides and then add a little oil or ghee and cook till they turn brown)


Goan Egg Curry
4 eggs boiled, peeled and cut in halves lengthwise
2 onions finely sliced
1/2 raw mango cut into chunks
Salt to taste

To be ground to a paste
4 Dry red chillies (use the Kashmiri chillies if you have them - they give a better color)
1/2 a coconut cut into small pieces
1/2 inch piece of ginger
3-4 flakes of garlic
5 - 6 peppercorns
1 tsp coriander seeds
4-5 methi seeds
marble sized ball of tamarind
1/2 tsp turmeric pd
1/2 tsp cumin seeds
1 green chilli
salt to taste

Grind all the above to a smooth paste and reserve.

Heat oil in a pan and then add the sliced onions and fry till they turn brown. Then add the ground mixture and fry for 4-5 minutes. Add water according to the desired consistency and the green mango chunks and salt and cover and cook till the mango chunks are well cooked.
Tastes great with rice!
